Lamb Rogan Josh

INGREDIENTS

  • Olive oil cooking spray
  • 900g lean lamb, cut into 1cm pieces
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 tablespoons Rogan Josh curry paste
  • 425g can crushed tomatoes
  • 1/2 cup low-fat yoghurt
  • 1/2 cup mint leaves, shredded
  • 2 cups cooked Basmati rice, to serve
  • 4 pappadums, to serve

METHOD

Step 1
Spray a saucepan with oil and heat over medium-high heat.

Step 2
Season lamb with salt and pepper. Add one-third of the lamb to saucepan. Cook for 2 to 3 minutes or until browned. Remove. Repeat twice with remaining lamb.

Step 3
Add onion and garlic to saucepan. Cook for 4 minutes or until soft. Stir in curry paste. Cook for 1 minute. Add lamb and tomatoes. Cover. Reduce heat to low. Simmer for 15 minutes or until lamb is tender.

Step 4
Stir in yoghurt and mint. Remove from heat. Serve with rice and pappadums.
